Ham and Cheese Hashbrown Casserole

I've been asked by a lot of people to share my recipe for this delicious dish... while I'd love to say it's my own, I can't. This was in a binder of all these recipes that Steve got from his mom and aunts. Not sure who claims it as their own, but it's still delicious and worth making over and over and over again!!!

You'll need:
  • Diced Ham (You can buy it already diced-- it's in the section with pork and porkchops)
  • Shredded Cheese (Your pick of the type- I prefer Sharp Cheddar)
  • Hashbrown Potatoes (I like the Southern Style ones in cubes, but the recipe calls for shredded)
  • 1 Onion (We use sweet onions)- You can reduce the amount if you don't like onion-- but I wouldn't opt out completely, as they give it a yummy crunch when cooked
  • 1 can of Cream of Potato soup (off-brand is just as good as Campbell's)
  • 1 can of Cheddar Cheese soup (usually I can only find this from Campbell's)
  • 1 16oz container of sour cream (You can use reduced fat-- but I wouldn't use fat-free)
  • Black Pepper (just a few shakes)- THIS IS OPTIONAL (I sometimes don't include it)
  • A LARGE bowl (the bigger the better)
  • A Medium bowl
  • A glass cake pan (13x9 or so)
  • Cooking Spray
Pre-heat your oven to 350
Follow these steps in this EXACT order!!

Dump the potatoes into the LARGE bowl
Empty the entire 16oz container of sour cream into the MEDIUM/SMALL bowl

Add the Cream of Potato soup to the sour cream

Add the Cheddar Cheese soup to the sour cream and Cream of Potato soup 

Mix the contents of the MEDIUM/SMALL bowl with a spoon

In the LARGE bowl, add the onion

Next add the diced ham to the LARGE bowl

Add 1/2 of the cheese

Add the pepper and stir the LARGE bowl with a spoon

Add the sour cream/soup contents from the MEDIUM/SMALL bowl to the LARGE bowl
 
This is what it'll look like when everything is blended
ADD TO THE SPRAYED/GREASED GLASS PAN

Spread evenly, then add the remaining half of cheese on top

Put the dish (UNCOVERED) into the oven (which should be pre-heated now) for 60-65 minutes

When it's done... it'll look (AND SMELL) delicious!!! Let it stand for at least 10 minutes to cool and settle

When you can't stand it anymore... DIG IN!!!
I can't say how much it makes... but I can say that it's even better the second and third day!!! Be sure to microwave with a piece of wax paper over it though... it likes to pop and spash all over the inside of a microwave!!!

We made this tonight and it was good, I just wish that it had measurements for the hash browns and cheese. I mean we just had to take our best guess and eye ball it
